This site is in Dutch, but google translate does an alright job in translating it. http://www.stadsherstel.nl/ (click on "zaalverhuur" on the left side) These are "official" locations to use in Amsterdam for weddings or parties.
We got married in the Vondelkerk -- which was beautiful. We decided to have the party however at the Cobra Cafe (http://www.cobracafe.nl/en/index.htm). Both are a lovely locations. There are also plenty of other places around as well, of course.
There are many great hotels. The American is one of my favourites. http://www.edenamsterdamamericanhotel.com/nl/overview.aspx Even if you don't stay here... the brunch on Sat morning is worth a visit. It's in a gorgeous art deco style hall that has remained the same since the hotel was built.
