I got married on Key Biscayne at my in laws' house, but we hosted a brunch the following day at the Ritz and it was STUNNING. It is right on the beach but also has option to host inside. They are incredible to work with and it is the perfect place to get married.
You will be in good hands.
The Ritz is very nice but it is a bit pricey.
Another wonderful option is The Palms on Miami Beach. For a destination wedding it is great because your guests can stay at the hotel, walk to the clubs and cafes of South Beach, lay on the beach and as for the venue, they have the ability to close off the beach at the hotel so you can have a private beach wedding with the reception either outdoors or in their ballroom.

Rusty Pelican is the place you're looking for. Had our wedding there last month & it was amazing.
Only problem with the Rusty Pelican is that they don't have a beach for the beach wedding so you have to do it at one of the public beaches on Key Biscayne. Based on previous weddings I have shot for these types of weddings, the B&G had to obtain a private event license to close off the section of the beach. Another permit allowing them to have a professional photographer (me) at the site. Another permit to using public parking for a private event. The then had to pay for two officers to monitor beach goers at the event and another police car to deal with traffic in and out of the beach parking entrance. Granted the B&G spent over $150K on the wedding so they let their coordinator handle the permit details.
If you do it at one of the resort hotels you only need the private event permit which runs a couple hundred dollars.
The first I looked for on Key Biscayne was Virginia Key Beach Park. I looked at it in September and they were developing more areas of the park. They have a beach area towards the back which I thought was beautiful. The park area was a bit run down. I would check it out if in person to see if it's to your liking. I still have a flyer on home & could scan it in for you with the price listings. I think it was $250 - $300 for the rental of the place.
Our wedding ceremony was originally planned to take place in Crandon Park on Key Biscyane Beach with a venue overlooking the bay only a short drive away. There are a few options on Key Biscayne like the Ritz Carlton and Rusty Pelican(overlooks the bay) both are beautiful and overlook water. It really depends on your budget. There is also Crandon Park and Bill Baggs State Park for outdoor beach ceremonies, but they do not offer coverage should the weather turn bad.
As I mentioned, our wedding was supposed to be on Key Biscayne, but due to a series of events we ended up at Newport Beachside Hotel and Resort in Sunny Isles (aka North Miami Beach). They offer great packages and the food is pretty good...but most importantly they are located on a very beautiful beach!!! And they have a "Plan B" option that overlooks the pool and beach area should you have bad weather. I know this because on the day we married, January 9, 2010, which is supposed to be the dry season with average temperatures in the 70's....it rained. I believe the exact words they used were "it looks like there is a hurricane out here". There were water spouts over the ocean and pool, and flurries in west Miami! Our wedding coordinator at the Newport, Tammy, didn't skip a beat. She called me first thing that morning to tell me they would be moving the ceremony inside and set everything up. They trully did a wonderful job and our wedding had over 150 guests. I would be more than happy to send you more information and pictures from our wedding so you can see the location. This is a one stop shop that your guests might appreciate we had a few hiccups with them bu they were minor. I highly recommend Newport..take a look and let me know what you think
